Italian Bruschetta

I bet most of you guys have watched the movie 'Julie & Julia' in which there a scene where Julie speaks of her deep inspiration for Julia's cooking with her husband while making Bruschetta. Little she realizes how delicious and crunchy her Bruschetta turned out to be as her husband devours on it and compliments her dish whilst she vents out her feelings.

That scene got me all worked up to come up with my version of Bruschetta and I was determined to get the same crunch and the oozing of colors from the beautiful veggies in mine.


The recipe turned out delicious and crunchy! It can serve as a perfect side dish to any small meal

Ingredients:


  • Baguette - 1 loaf

  • Olive Oil - a quarter cup

  • Garlic Pods - 1 pod to rub and 2 pods to add to the Bruschetta mixture

  • Tomatoes - 3

  • Yellow Bell Pepper - 1

  • Red Bell Pepper - 1

  • Basil leaves - 4-5 leaves ( I have used coriander instead)

  • Salt - to taste

  • Pepper - to taste

  • Oregano - 1 tsp


Method:


Take the tomatoes and squeeze the center out before chopping it into small cubes.

Chop the garlic finely and add it to the bowl,

Roll up the coriander leaves

Sprinkle some salt and black pepper and 1 tsp of oregano. Mix it well

Take a loaf of Baguette and slice it diagonally into 1.5 inch slices.

If you don’t have a charcoal grill then just use a skillet, take a clove of garlic and slice the upper half to expose the inside. Take the side and rub it all over the bread pieces front and back.

Take a few slices of butter and toss them into the pan. Once the butter melts, add the bread onto the melted butter and toast it until it turns brown and crisp on both sides.


How To Serve:


Using a spoon, scoop out some of the mix, and cover the bread with it. You can top the finished product with some lemon juice or balsamic vinegar.
